Note-taking is a critical skill in Cybersecurity.
You can use different tools like Cherry Tree, OneNote, notion.so, Joplin and others.
Being able to take good notes is crucial since you cannot remember all commands and details, unless you are a genius. If you take a course, take notes. There are many different ways to take notes, my favorite way to organize the knowledge looks like this:

Start with the course name (1), because later you can attach all your notes to a huge one and therefore you need a folder. Most courses have the general information, and you can separate them. In labs (2), I store all data for my labs or modules. The next part depends on the course (3), and you have to be flexible. Usually, I copy the content in Overview and write my workings in Commands.
One piece of advice: Store this data in the cloud. If you study a lot and pay for courses, your notes have a very high value, and if you lose them, you lose the weight of thousands of dollars and thousands of study hours! Back up the notes regularly.
You can take screenshots the intelligent way. On Linux, I use Flameshot, and on Windows, I use Greenshot. Both have additional features to add things or blur some content.
What is the most significant advantage?
If you use a program with a search function, you can find the desired information quickly. I have thousands of notes in my main tree, and even though I know where most things are, a quick search is much faster.
